1.Seasonal delight: Mango Lime Granita

How can we ignore the king of fruits that makes an appearance around summers? Many summer childhood stories are incomplete without the mention of the brilliant yellow mango! Rich in the good bacteria-boosting fibre, vitamins notably vitamin A, minerals, antioxidants such as zeaxanthin among others.

Presenting a recipe for Mango Lime Granita. Granita is Italian for a granular textured water or fruit juice ice. The texture element in mango granite is provided by diced mango pieces.

Ingredients that you need

  • 3 cups of fresh chopped mangos (close to 3 big mangos)
  • 1 cup water
  • Juice from 2 limes or adjusted as per taste.
  • Honey or sugar if needed

Method

  1. Grind the pieces of mango in a food processor or mixie until smooth.
  2. Mix lime juice and water.
  3. Adjust sweetness if required with honey or sugar (highly optional)
  4. Pour this mixture in a metal pan and set it in the freezer for 3 hours. Keep in mind to whisk this mix every hour. This introduced granules, typical of a granita.
  5. Once set, scrape off the crust of the mixture such that it resembles shaved ice.
  6. Set it in a tall glass and enjoy on a hot summer afternoon!

2.Very Berry Strawberry Granita

Another loved fruit by many is the sweet and tangy strawberry. So why not consume in the best possible form, as a popsicle. The deep, rich red hue provides us with the antioxidant flavonoids as well as good amounts of fibre, folic acid, and potassium. Go ahead and enjoy this tasty nutritious treat.

Ingredients that you need

  • Fresh diced strawberries: 3 cups
  • 1 cup hot water
  • 2 tablespoon sugar
  • 2 tsp lemon juice

Method

  1. Dissolve sugar and lime juice in the hot water to make a tangy sugar syrup.
  2. Grind the strawberries in the food processor.
  3. Mix the syrup with strawberry pulp.
  4. Pour this mixture in a metal pan and set it in the freezer for 3 hours. Keep in mind to whisk this mix every hour. This introduced granules, typical of a granita.
  5. Once set, scrape off the crust of the mixture such that it resembles shaved ice.
  6. You are all set to devour this tasty strawberry granita.

3.Refreshing lemon popsicles

Summer memories are never complete without a tangy mention of a refreshing nimbu pani with a dash of masala. How about we recreate that magic in a popsicle form? This lemon popsicle also has the twist of lemon zest. A must try recipe, we say.

Ingredients that you need

  • Lemon juice: 1 tablespoon
  • Water: 1 cup
  • Sugar: 3 tablespoons
  • Lemon zest (outer part of the lemon): of 2 lemons
  • Popsicle sticks: 5nos

Method

  1. Make a sugar syrup with the mentioned amounts of sugar, water and lemon zest.
  2. Let it cool and then mix lemon juice.
  3. Pour this mix into the mould and let it set.
  4. Once it is half set, stick a popsicle stick in the mould.
  5. Your lemon popsicle is all set to be devoured.

Note: You can do the same with orange, grapefruit, and sweet lime. If you are up for a fruit salad with a difference, then this mix fruit popsicle is sure to interest your lil one!
